
This dish is ideal for watching you figure and for a Monday without meat since it does not contain any animal products, it is a delicious and original tinga of nopales, based on tomato sauce, onion and carrot, served on tostados with beans.
TOSTADAS DE TINGA DE NOPALES
Ingredients
4 Portions
- 3 cups nopal, cut into strips
- 1 tablespoon salt
- 1 teaspoon baking soda
- enough Water
- 6 tomatoes
- 2 cloves garlic
- 1/4 cups Vegetables soup
- 1 tablespoon oil
- 1/2 onions, filleted
- 1 tablespoon oregano
- 1 teaspoon salt
- 1/2 teaspoons black pepper
- 1 cup carrot, grated
- 8 fried or toasted corn tortilla
- 1 cup bean
- to taste avocado, in slices to decorate
Preparation
In a pot of boiling water, put the nopales with salt and baking soda until cooked. Drain and reserve.
For the caldillo, blend the tomatoes with the garlic, the chipotle chili, and the vegetable broth.
In a deep pan, add the onion with oil, add the sauce, oregano, salt, pepper and cook for 15 minutes. Add nopales, carrots and cook for 5 more minutes. Adjust the seasoning.
Serve the tinga on corn tostados with the beans and decorate with avocado.
