
Cook this recipe for chicken fajitas with nopales easy and fast, in just 35 minutes. This is a very practical stew for any day of the week, with its delicious pasilla sauce made with spiced tomato puree. The fajitas are perfect for taquear and to be accompanied with beans or rice, and a little crumbled panela cheese.
CHICKEN FAJITAS WITH NOPALES IN PASILLA SAUCE
Ingredients
4 Portions
- 5 pasilla chili peppers, hydrated and soaked in hot water, for the sauce
- 2 cups Puree Condimentado Tomato Puree®, for the sauce
- 1 teaspoon allspices, roasted, for the sauce
- 1 teaspoon cumin, whole and roasted, for the sauce
- 1/4 bunches fresh coriander, for the sauce
- 1 teaspoon oregano, for the sauce
- 2 teaspoons oil
- 2 chicken breasts, cut into strips or fajitas
- 1 cup onion, filleted
- 1 cup nopal, cooked and cut into strips
- 1 pinch salt
- enough tortilla, for taco
- enough fresh coriander
- enough panela cheese, crumbled, for taco
Preparation
For the sauce, place the pasilla pepper with everything and the soaking water in the blender, add the Flavored Tomato Puree® from the Fuerte®, the fat pepper, the whole cumin, the cilantro and the oregano, blend until you get a smooth adobito. Reservation.
Heat a deep grill pan over medium heat, place the oil and cook the chicken breasts, so that they are grilled and browned, add the onion, the nopales, and then pour the sauce that you had previously blended; Season with salt and cook until the sauce is reduced slightly. Reserve warm.
On a plate place hot tortillas, serve the fajitas, accompany with fresh cilantro and panela cheese. Enjoy
