Blueberry Hazelnut Crumble Bars


These blueberry hazelnut crumble bars are gluten-free, dairy-free, vegan, and refined
sugar-free. So much healthier, but even more delicious than the alternatives!

Blueberry Hazelnut Crumble Bars [Vegan, Gluten-Free]

Ingredients

For the Crumble:

  • cups gluten-free rolled oats
  • 1 cup hazelnut flour
  • 1/4 cup coconut oil
  • 4 tablespoons hazelnut butter (or other nut/seed butter)
  • 4 tablespoons pure maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

For the Blueberry Filling:

  • 1 cup blueberries (fresh or frozen) 
  • 2 tablespoons chia seeds
  • 2 tablespoons pure maple syrup
  • 1 tablespoon lemon juice
  • 1/2 teaspoon lemon zest

Preparation

For the Crust:

  1. Preheat oven to 350°F and line an 8x8-inch baking pan with parchment paper. Add all the crumble ingredients to a food processor and process to thoroughly combine into a crumble-like mixture. Press 2/3 of the crumble tightly into the bottom of the pan. Bake uncovered in oven for 10 minutes. Set aside to cool.

For the Blueberry Filling:

  1. Add blueberries to a small pot over medium-low heat and bring to a gentle simmer. Reduce heat to low and cook for about 5 minutes until soft. Remove from heat and stir in chia seeds, maple syrup, lemon juice, and lemon zest. Set aside to cool for 5-10 minutes.

Assemble:

  1. Pour the blueberry filling over the baked crumble and spread evenly. Sprinkle the remaining oat mixture as crumble on top and bake in oven for about 20 minutes, until edges of the crust are golden brown. Let the bars cool for 10 minutes before cutting. Store in an airtight container in fridge for about a week or freeze.

Notes

If you can't find hazelnut flour, use almond flour instead, or pulse 1 cup of hazelnuts or almonds in a food processor until you get a fine meal. You can use any berries you have available, either fresh or frozen. For fresh berries, add a tiny splash of water and cook for 5 minutes. Frozen berries take about 10 minutes to cook and release more water, so no need to add extra. Depending on the berries you choose, you might have to add more (or less) sweetener. So taste test and adjust to your liking.
