Vegan Tzatziki. Oh my gosh, this one is pretty close to the real deal and so flavorful. It doesn’t lack flavor, creaminess, or strength. It’s completely balanced with the amounts of fat, acidity, and salt – you will love it. This dip is perfect when paired with all the natural foods in the world – spread it on homemade crackers, dip it with fresh foods like carrots, tomatoes, and cucumber or even slap it on your next salad bowl! NUTRITIOUS TZATZIKI [VEGAN, GLUTEN-FREE]
INGREDIENTS
- 1 cup cashews soaked for at least 2 hours
- 1/4 cup lemon juice
- 3 tablespoons chickpea tahini
- 3 garlic cloves
- 1/2 cup water (add less or more)
- 1 cucumber, grated and squeezed to remove excess liquid
- 1/4 cup fresh dill, thinly chopped
- 1/2 tablespoon mint (optional), thinly chopped
- Salt and pepper to taste
- 2-3 tablespoons extra virgin olive oil
PREPARATION
- In a high-speed processor add your cashews, lemon, tahini, garlic, water, salt/pepper. Blend until very smooth, scrapping down the sides as necessary.
- Remove from processor and transfer to large mixing bowl.
- Add all other ingredients and stir till well combined.
- Adjust seasonings as desired.
- Serve with salads, falafel, fresh vegetables, or your favorite crackers.
