This recipe was a finalist in the Best Cocktail Contest. A Pimm’s Cup gone south of the border, the cocktail gets it moniker from a terrifying mythical creature whose name means “goat sucker.”
El Chupacabra
Serves 1 drink
- 1ounce blanco tequila (Herradura, Dos Manos, and Gran Centenario all work)
- 1ounce Pimm's #1
- 3/4ounce fresh lemon juice
- 3/4ounce simple syrup (1:1)
- 1dash Peychaud bitters
- 2pieces sliced cucumber
- 1/4ounce Cynar
- 1splash soda water
- Muddle 1 cucumber slice at the bottom of a shaker.
- Add first five ingredients.
- Add ice and shake.
- Strain into a collins glass with ice.
- Top with soda water (to taste).
- Float 1/8-1/4 oz. Cynar.
- Garnish with a cucumber slice and serve!
