Sweet Potato and Cauliflower Pizza Base [Vegan, Gluten-Free]
Ingredients
- 3.5 ounces Cauliflower
- 3.5 ounces Sweet Potato Rice *
- 2 1/2 flax eggs
- 1 ounces Buckwheat flour
- 2 teaspoons Tamari
- 2 teaspoons mixed Italian herbs
Preparation
- Preheat the oven to 350°F
- Blitz the cauliflower in a blender
- Once blitzed put the cauliflower rice in a tea towel and wring throughly to get rid of the excess water
- Place the cauliflower in a bowl and combine with all the other ingredients
- Shape the dough into a pizza on a baking tray lined with baking paper
- Place in the oven for 20 minutes
- Take out the oven, smooth some passata or tomato puree on the base and top with your favourite pizza toppings
- Place back in the oven for 10 minutes
Notes
If you don't have a packet of sweet potato rice you could blend a partially cooked sweet potato instead
