only wholesome ingredients. So, no vegan butter or margarine! Furthermore, you’ll need merely 4 ingredients, one bowl, and less than 10 minutes of your time.Shortbread Cookies [Vegan, Gluten-Free]
Ingredients
- 3.5 ounces of peanut butter (additive-free)
- 2 tablespoons (1.8 ounces) unsweetened plant yogurt
- 1/4 teaspoon Himalayan salt
- 1/4 teaspoon psyllium powder
- 1.4oz oat flour
Preparation
- First, scoop peanut butter (at room temperature) into a bowl.
- Then add the remaining ingredients (you may sift the flour, but it’s not mandatory) and mix the dough together until you have a nice ball. Start with a spoon and finish with your hands.
- If you want, bake savory shortbread cookies, crackers, or form breadsticks (grissini). You may also add some dried herbs/spices such as rosemary, oregano, thyme, cumin, caraway, and basil.
- Bake thick cookies on a baking sheet lined with parchment paper at 350°F for 25 minutes until light golden.
