Guacamole is undeniably delicious, but how can it be taken to the next level? By frying, of course! The first method shown here is for "faux fried" guacamole, which is simply a dollop of guac on a sliced bell pepper and topped with crushed tortilla chips. It's incredibly simple to make, very refreshing, and a healthier alternative to traditional frying. However, for those days when you want a decadent and impressive treat, the second method for fried guacamole is the real deal! Balls of guacamole are deep fried in tempura batter and a crispy coating of crushed tortilla chips. Unsurprisingly, they are absolutely wonderful.
Fried Guacamole Two Ways [Vegan]
Ingredients
For the Faux Fried Guac:
- 3-4 small bell peppers, cut into bite-sized wedges
- 1/2 cup guacamole
- 1/2 cup crushed tortilla chips
- Cilantro, for garnish
For the Real Fried Guac:
- 1 1/2 cups guacamole
- 1 cup flour, plus extra 1/4 cup
- 1 tablespoon cornstarch
- 1 teaspoon salt
- 1 1/4 cups bubbly water
- 1/2 cup crushed tortilla chips
- Oil, for frying
- Cilantro, for garnish
Preparation
To Make the Faux Fried Guacamole:
- Simply spoon a small dollop of guacamole onto each pepper wedge and sprinkle with tortilla chips. Garnish with cilantro.
To Make the Real Fried Guacamole:
- Place heaping tablespoon-sized dollops of guacamole onto a parchment-lined plate, cover with plastic wrap and freeze for about one hour.
- Meanwhile, heat oil to 375°F and combine the 1 cup of flour, cornstarch, salt, and bubbly water in a bowl and whisk to combine. Place the remaining 1/4 cup of flour in a small bowl.
- To coat the guacamole, first roll each of them in the flour, tapping off excess, then dip into the batter. Dip each guacamole round in the batter a second time, then top with the crushed tortilla chips.
- Fry in oil for about 3 minutes, or until golden brown.
- Serve immediately, as guacamole does not keep longer than about an hour or so.
