
Noodle soup is a classic recipe in Mexican home kitchens, and although it is already a delicious dish on its own, in this version accompanied by meatballs that enrich the nutritional value of this dish, it becomes even better. This noodle soup could well be a complete meal, perfect for dinner or to take as a lunch to work.
NOODLE SOUP WITH BEEF MEATBALLS
Ingredients

- 1/2 kilos ground beef, beef for meatballs
- 1 tablespoon garlic powder, for the meatballs
- 1 tablespoon onion powder, for the meatballs
- 1 cup coriander, finely chopped for meatballs
- 1 1/2 cups bacon, fried and chopped, for meatballs
- 1 egg, for the meatballs
- 1/2 cups ground bread, for the meatballs
- enough vegetal oil, for the meatballs
- to taste salt, for the meatballs
- to taste black pepper, for the meatballs
- 6 tomatoes
- 1/2 cups mashed tomatoes
- 1/4 onions
- 1 clove garlic
- 2 cups beef broth
- to taste salt
- enough vegetal oil, to brown the noodles
- 3 cups noodle
- enough avocado, To accompany
- enough coriander, to decorate
- enough serrano pepper, to decorate
Preparation
For meatballs, mix ground beef with garlic powder, onion powder, cilantro, bacon, egg and ground bread; Season with salt and pepper. Then, in a pan over medium heat, heat vegetable oil and seal the meatballs completely for 5 minutes. Reservation.
For the broth of the noodle, blend the tomato with the tomato puree, onion, garlic and beef broth, add salt. Reservation.
For the noodles, heat a pot over medium heat with plenty of oil, then add the noodles and brown them for 5 minutes; if necessary, remove excess oil. Add the tomato broth that you liquefied and cook for 10 minutes, then add the meatballs and cook for approximately 10 minutes, until the texture of the noodles is smooth and the meatballs are fully cooked; in the end, check the seasoning and if necessary add salt.
Garnish with avocado, coriander, slices of serrano pepper and accompany with lemon.
