A light and fresh green soup for a refreshing spring meal!
Emerald Kale Detox Soup [Vegan]
Ingredients
- 4 cups tightly packed kale (I used baby kale which made things even easier--no need to chop!)
- 1 large cucumber, peeled, de-seeded and chopped
- 2 cups chopped zucchini
- 2 green onion stalks, trimmed
- 1 avocado, halved
- juice of one lime
- large handful of fresh parsley
Preparation
- Place all ingredients (except for 1/2 of the avo) in a blender and blend until smooth.
- Portion and serve, garnishing with the remaining 1/2 of avocado and whatever else you like.
- Enjoy!
