Traditionally chakuli is a deep-fried Indian snack prepared using rice, lentils, and different spices. This "instant" version uses rice flour and is baked instead of fried, making them a delicious snack that satisfies your craving for something crunchy. Baked Chakuli: Indian Rice Fritters [Vegan, Gluten-Free]
Ingredients
- 1 cup rice flour
- 1 teaspoon red chili powder or cayenne powder
- 1 teaspoon cumin seeds
- 3 teaspoons sesame seeds
- Pepper, to taste
- A pinch of asafoetida, garlic powder, or onion powder
- 1/4 teaspoon turmeric
- 1 teaspoon vegetable shortening or oil
- 1/4 cup vegan yogurt
- Salt, to taste
Preparation
- Preheat the oven to 350°F.
- In a bowl, add rice flour, vegan yogurt, chili powder, cumin seeds, sesame seeds, pepper powder, asafoetida, turmeric powder, and salt and mix well.
- Add warm water little by little and knead it to form a semi-soft dough.
- Put the prepared dough in the chakli press and start shaping it into a spiral shape on a greased baking tray from the center towards the outside. If you don't have a chakli press, you can make them by hand by forming the dough into sticks.
- Bake for about 25-30 minutes, turning it once at the 13-minute mark, or until it is done.
- Chakli is now ready. Cool it and store it in airtight container. This will remain fresh for at least 15 days.
