Potato Pea Curry [Vegan]
Ingredients
- 1 onion, diced
- 2 large tomatoes, diced
- 1 inch fresh ginger, minced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 1/2 teaspoon chili powder
- 1 teaspoon garam masala
- 1 teaspoon sea salt
- 1 cup water
- 3 medium potatoes, chopped
- 2 cups frozen green peas
- 1/2 cup full-fat coconut milk
Preparation
In a large pot on medium heat, saute the onion, garlic, and ginger for 4-5 minutes. Add in all the spices and mix to incorporate; about 3 minutes. Once fragrant, add in the tomatoes, water, and potatoes. Cover and cook about 15 minutes, until potatoes are tender, then mix in the peas and coconut milk. Cook for 3 more minutes, then remove from heat and serve warm.
