This Mushroom Bourguignon stew is so rich in flavor and is also so filling. Packed full of mushrooms, it has so much protein and will leave you filling so happy.
Mushroom Bourguignon [Vegan]
Ingredients
- 4 cups mushrooms
- 12 small onions
- 2 cloves of garlic, minced
- 1 onion, finely chopped
- 1 carrot in slices
- 1 can chopped tomatoes
- 1 cup + 4 tablespoons red wine
- 3 teaspoons tomato paste
- 6 tablespoons olive oil
- 4 bay leaves
- fresh thyme
- 1 tablespoon flour
- salt
- pepper
- parsley
Preparation
- On a non-stick pan sauté the mushrooms. Add the wine. Add garlic, onion, carrot, laurel, thyme and cook on low heat. Add the tomato. Meanwhile in another pan warm 1 tablespoon oil and sauté the onions. Add the mushrooms.
- Add salt, pepper, oil and parsley. Serve with pasta or rice.
