These have tons of flavor and can be served with your favorite toppings. The Sriracha Aioli makes a perfect addition, but enjoying them with bbq sauce is also a good choice. For the full experience, be sure to include a side of fries!
Spicy Black Bean Patties with Sriracha Aioli [Vegan]
Ingredients
For the Black Bean Patties:
- 1 red onion, finely diced
- 8 garlic cloves, minced or 3 tablespoon minced garlic
- 2 cans black beans, drained and rinsed
- 1 cup rolled oats
- 1 cup frozen corn, thawed
- 1/2 cup nutritional yeast
- 1/4 cup ground flax seed
- 2 tablespoons mustard
- 3 tablespoons hot sauce (decrease for less spiciness)
- 2 tablespoons cumin
- 1/3 cup tamari (or soy sauce)
- 2 tablespoons chili powder
- 1 teaspoon turmeric
- 1 teaspoon red pepper flakes (optional)
- toppings of choice: greens, tomatoes slices, onions, avocado
For the Sriracha Aioli:
- 2/3 cashews raw
- 1 close garlic minced
- 1/2 cup soy milk unflavored
- 3 tablespoons Sriracha
- 1 tablespoon hot sauce of your choice
- 1/4 teaspoon salt
Preparation
For the Black Bean Patties:
- Preheat oven to 375°F.
- Saute onion and garlic in a small pan over medium heat with 1 tablespoon water for 2-3 minutes, or until onions start to soften. Remove from heat.
- Add all black bean patty ingredients (except toppings) to the mixing bowl of a stand mixer fitted with a flat beater. If using a tilt-head mixer, lock head into place. Mix ingredients on low until fully combined (about 1 minute).
- Form mixture into 12 balls and flatten into patties on 2 parchment paper lined baking sheets.
- Bake for 30 minutes. Remove from oven and let sit for 10-15 minutes; patty will firm up as they cool.
- Serve on whole grain bread, in a wrap or over a bed of greens with your favorite toppings.
For the Sriracha Aioli:
- Place cashews in a small bowl. Fill bowl with boiling water and let sit for 20 minutes. Strain water out. You can also let cashews soak in water overnight.
- Place cashews along with all other ingredients in a food processor and process until smooth.
- Stop and scrape down sides as needed.
Notes
Store aioli in a sealed container in the refrigerator for up to 4 days. Freezer meal: To freeze cooked and cooled patties leave on baking sheet and place in freezer for at least 1 hour. Transfer patties to air-tight freezer bag for up to 3 months. For a meal in minutes, reheat frozen patty in the microwave for 30-45 seconds and serve. These are perfect for making in bulk and keeping on-hand for a quick and easy meal.
