This breakfast egg casserole is super easy to make and really light to boot. It consists of
eggs and cottage cheese at it base and from there you can add pretty much whatever you want.

A super easy breakfast egg casserole with diced ham and cheddar cheese.
ingredients
- 10 eggs
- 1 cup ham, diced
- 1 cup cottage cheese
- 1 cup cheddar cheese, shredded
- 4 green onions, sliced
- 1/4 cup pickled jalapeno peppers, sliced (optional)
- salt and pepper to taste
directions
- Mix everything and place in a greased 9x9 inch baking pan and bake in a preheated 375F/190C oven until the eggs have set and the top is a light golden brown, about 20-25 minutes.
