This was an "experiment" that my husband gave 2 thumbs up!
Apple Carrot Muffins
INGREDIENTS
1.5 cups whole wheat flour
3/4 cup oatbran (rice bran works too!)
2 teaspoons ground cinnamon or pumpkin pie spice
1.5 cups finely shredded carrots
2 apples peeled and shredded (pear is an option)
1/2 cup raisins (optional)
1 cup chopped nuts (optional)
3/4 cup almond milk (I ended up adding a bit more here as dough was too stiff)
two eggs substitute (I omitted this…there is enough binding in flax)
DIRECTIONS
Mix together flour, flaxseed, oatbran, sugar, baking soda, baking powder, salt and cinnamon in a large bowl. Stir in carrots, apples, raisins, and nuts. Combine milk, eggs and vanilla. Pour liquid ingredients into dry ingredients. Add applesauce. Stir until ingredients are moistened. Do not over mix. Fill muffin cups 3/4 full. Optional – sprinkle with flax seeds on top! Bake at 350 degrees F for 15 to 20 minutes. Yields 15 muffins.
