4-INGREDIENT FLOURLESS PUMPKIN PLANTAIN PANCAKES [VEGAN, GRAIN-FREE]
INGREDIENTS
FOR THE PANCAKE BATTER:
- 1 1/2 cups banana/plantain flour
- 1 tablespoon stevia
- 1 tablespoon ground flax seed (optional)
- Spices, such as cinnamon or pumpkin spice (optional)
- 1/2 cup pumpkin purée
- 1 1/4 cups almond milk
FOR THE CHOCOLATE SAUCE:
- 2 tablespoons cocoa powder
- 1 tablespoon stevia
- 3 tablespoons almond milk
PREPARATION
- Heat up a nonstick griddle to high heat.
- To make the pancake batter, combine the banana flour, stevia, flax seed, and spices.
- Add the pumpkin purée and almond milk and stir to form thick batter.
- Use a 1/3 cup measure to spoon the batter onto the pancake griddle. Cook for about 8 minutes on each side, or until the outsides are browned and crisp and the inside is cooked to your liking.
- Make the healthy chocolate sauce by combining ingredients and stirring.
