Ingredients
For the Salad:
- 1/2 bag of arugula
- 2 zucchini
- 1 avocado (ripe and ready to eat)
- 6-8 sundried tomatoes
- .7 ounces pine nuts
- Pinch of chili flakes
- Salt and pepper
For the Salad Dressing:
- 1.75 ounces dairy-free yogurt (unsweetened)
- 1 lemon (grated and squeezed)
- 1 teaspoon sesame oil
- 1 tablespoon garlic puree (or finely chopped and crushed garlic)
- Salt and pepper to taste
Preparation
- Prepare your oven and turn on the grill to a high temperature (we used around 392°F.
- Thinly slice the courgette long ways so that you are left with thin long strips. Season the courgette with salt, pepper, and a drizzle of oil.
- Place the courgette under the grill. We grilled ours for 10 minutes.
- In the meantime, but making sure to keep an eye on the courgettes, you can prepare the dressing. In a small bowl, get all your ingredients and mix them.
- Take your courgette out of the oven.
- Thinly slice your avocado (we cut ours around 1cm thick).
- Put the leaves in the bowl, add all the remaining ingredients. Drizzle the dressing on top or have it in the dipping bowl at the side.
