Ingredients
- About 3 ounces sliced veggie meat, such as seitan
- 5 White Button mushrooms
- 2 firm, ripe tomatoes
- Juice of 1 lemon or lime
- 1 medium-sized white onion
- 1 bunch of fresh mixed herbs
- 1 tablespoon mirin
- 1 tablespoon coconut syrup
- Vegan cheese
- Pink pepper, to taste
- Sea salt, to taste
- Greens of choice
- Bread of choice
- Extra virgin olive oil, to taste
Preparation
- Clean the mushrooms, then cut into thick slices. Cook briefly in a skillet, let cool, then salt lightly.
- Slice the onion, then cook over low heat with a little oil and salt. After a few minutes, add the mirin, then raise heat and allow the liquid to evaporate. Add coconut syrup and let the onions caramelize.
- Slice the tomato, then get your bread ready. Start with the greens, followed by tomatoes, mushrooms, veggie meat, caramelized onions, and cheese.
