ingested. The "sushi" is comprised of tender quinoa, fresh red cabbage, and crunchy pumpkin seeds all wrapped up in nori. Though this recipe is a simple one, it's exceptionally delicious.Red Cabbage Sushi Burritos [Vegan, Gluten-Free]
Ingredients
- 4 sheets nori
- 1/2 cup quinoa
- 1 cup water
- 1 handful pumpkin seeds
- 1/2 red cabbage
- 2 tablespoons tamari
Preparation
- Cook the quinoa in boiling water for 15 minutes.
- Allow it to cool for 10 minutes (no longer because cold sushi does not work and if the sushi is too hot it will melt the nori).
- Once the quinoa has cooled stir in the tamari sauce, red cabbage, and pumpkin seeds.
- Lay the nori on a plate.
- Put two or three tablespoons of the quinoa mixture on the nori. Once it is mostly rolled, spread some water on the end (this will help it stick) – do this for all the rolls.
- Roll, cut and serve.
