The body is a chemistry set; every bite of food and every thought we think affects its
chemistry. As we move through the last few weeks of winter let’s hunker down and make this delicious, comforting soup for an evening that will soothe both your mind and your body.
Soothing Comfort Soup
-1 butternut squash
-1 sweet potato
-3 carrot-sized daikon radishes
-1 yellow or Spanish onion
-1 piece of kombu seaweed (optional)
-1 can of coconut milk
-1 cup filtered water
-herbs de provence, salt, and pepper

Directions
Peel and chop the butternut squash, sweet potato, daikon radish, kombu, and onion.
Put veggies in a pot with ½ cup of filtered water and “sweat” the vegetables until they’re soft.
Remove the kombu from the soup (optional).
Add the coconut milk and puree the soup, add herbs/spices to taste.
Top with a fermented vegetable/mix such as kimchi, or sauerkraut.
