Cinnamon Apple Crêpes! 4 ingredient mini crêpes stuffed with sweet cinnamon

Ingredients
For the Crêpes:
- 1 cup plain flour (can sub gluten-free flour)
- 1 1/3 cup dairy-free milk
- 1 teaspoon cinnamon
- 1 tablespoon coconut sugar
- 3 tablespoons oil
For the Filling:
- 4 apples, finely chopped
- 1/4 cup water
- 1 orange, juiced
- 1 tablespoon coconut sugar
- 1 tablespoon cinnamon
For the Topping:
- 1/4 cup pecans, chopped
- 3 tablespoons Biscoff/cookie butter spread, melted
Preparation
- Prepare filling by adding apples, water, orange juice, coconut sugar and cinnamon to a large frying pan. Cook over a medium heat until soft and fragrant, adding more water as needed.
- Prepare crêpes while apples are cooking. Mix flour, dairy free milk, cinnamon and coconut sugar together in a medium bowl until smooth and runny. Heat a frying pan over a medium heat with 1 tablespoon oil.
- Add 2 tablespoons batter per crêpe, using the back of a spoon to smooth the batter out. Cook for a minute each side and repeat the process until all the batter is used up.
- Add cooked apples to each crêpe and gently roll up. Top with pecans and Biscoff spread.
