If you loved Creamsicles as a kid and are yearning for the same flavor but not the same list of potentially health-harming ingredients, (like high fructose corn syrup, Polysorbate 80, and maltodextrin, just to name a few) then, you’re in the right place! Macadamia nuts create a creamy base, freshly squeezed orange juice lends its orange flavor (surprise!), and date paste offers natural sweetness. This nostalgic pop also packs in healthy doses of vitamin C, fiber, and thiamin (B1).
Orange Creamsicle
Ingredients
1 cup orange juice (freshly squeezed)
1 cup macadamia nuts (raw, unsalted)
¼ cup date paste (link in Chef’s Notes)
2 tsp venilla extract
Directions

Add all ingredients to a blender or food processor. Blend until the macadamia nuts are completely blended and smooth.

Taste for additional flavor of your choice (more orange juice for citrus, more date paste for sweetness, more macadamia nuts for creamy).

Pour into popsicle molds, filling ¾ of the way full to allow for expansion, and freeze for at least two hours.

Substitutions
For the orange juice, use Navel, Cara Cara or other varieties of oranges available to you.

Make your own date paste.
Prep Ahead
Make the date paste ahead of time and store in an airtight container in the refrigerator for up to seven days or in the freezer for up to 30.
Storage
Store in an airtight container in the freezer for up to six weeks.
