This vegan Banana Loaf is a winner. The secret is to have very very ripe bananas as this makes the bread naturally sweet and dense, which is what you want in a banana loaf. Makes it easy to toast and can be frozen to eat later!
Banana Loaf [Vegan]
Ingredients
Wet:
- 4 very ripe mashed bananas
- 1/3 cup almond milk
- 2 Tablespoons flax meal
- 2 Tablespoons sunflower oil
- 2 Tablespoons maple syrup
- 1 teaspoon vanilla essence
Dry:
- 1/3 cup brown sugar
- 1&1/2 cups plain flour
- 1 teaspoon bicarbonate Soda
Preparation
- Preheat the oven to 350ºF – prepare your loaf tin.
- Mash the banana and mix with the wet ingredients. Add your dry ingredients and mix until just combined (don’t over mix this).
- Bake for 35-40 minutes.
- Cool, slice and enjoy!
