Green Pina Colada Breakfast Bowl [Vegan]
Ingredients
- 1 cup coconut milk
- 1/4 cup unsweetened coconut flakes
- 1/2 cup non-fat vegan Greek yogurt
- 1/2 cup cashew nuts (soaked for at least 4 hours)
- 1 1/2 cups frozen pineapple
- 1/2 cup frozen mango (optional)
- 2 handfuls of fresh spinach
- 1 date , pitted
- 2 tablespoons vegan vanilla protein powder of choice
Preparation
- Place all ingredients in a blender, and blend for a minute until all ingredients are pulverized into a thick cream.
- Top with any combination of fresh fruit, nuts, granola, toasted coconut, etc. and serve immediately.
