This sauce is a very handy recipe to have when you don't know what to do with tasteless fruit that you accidentally buy! It could be even peaches, apricots, mango, cantaloupe or papaya. You can put any veggies that you want in this sweet and spicy noodle bowl! It's perfect for when you don't have enough of each veggie to eat on its own. Try this sweet and spicy noodle bowl! It's delicious!
Sweet and Spicy Noodle Bowl [Vegan]
Ingredients
For the Noodle Bowl:
- Mung bean noodles
- 5.3 ounces firm tofu
- 1 tablespoon coconut oil
- 2 tablespoons low sodium Tamari
- 2 tablespoons maple syrup
- 2 teaspoons sesame seeds
- cilantro leaves to garnish
- scallions sliced to garnish
- crushed peanuts (optional)
- veggies of your choice
For the Sauce
- 4 nectarines (or other fruits such as mango, papaya or cantaloupe)
- maple syrup or raw coconut sugar to taste
- 2 tablespoons low sodium Tamari
- 4 cloves garlic
- 1 tablespoon coconut oil
- 1/4 cup coconut milk
- 2 teaspoons chilli paste (you may add more if you like)
- 2 teaspoons wakame flakes
- 1/4 cup water (you may add more if needed)
Preparation
For the Tofu:
- Cut tofu into cubes
- Preheat oil on the frying pan, add the tofu and drizzle with tamari.
- After few seconds add maple syrup and sauté 2-3 minutes on each side until golden.
- Add the sesame seeds at the end and take it off the heat.
For the Sauce:
- Dice your fruit and garlic sauté on hot coconut oil until mushy while adding tamari, sweetener and water.
- Take it of the heat and let it cool for 5 minutes.
- Transfer the mixture into a blender with milk
- Blend until smooth.
- Check the taste and see if it needs adjusting.
- Transfer in to a bowl and add mint.
To Assemble
- Cook veggies as needed
- Cook noodles according to package
- Add veggies, noodles, sauce, and tofu
