Ingredients
- 3 Haas avocados, pitted with skin-on
- ½ red bell pepper
- ½ small red onion (or to taste)
- 2 serrano chilis (want more spice? Add a spicier pepper), deseeded
- 2 heirloom tomatoes, halved
- 2 Tbsp melted coconut oil, for brushing the produce
- 2 limes
- ¼ tsp sea salt, or to taste
Instructions
- Brush all the veggies (including the avocado!) with coconut oil and place them face down on the grill over medium heat.
- Cook each until they were just starting to brown and blister. Times may vary depending on each veggie, and how large you slice them.
- As the veggies finish cooking,take them off to cool.
- Scoop out the avocado into a medium-sized bowl. Chop the peppers, tomatoes and onions finely and add to the bowl. Mashed until it reaches your desired consistency.
- Squeeze in one lime and sea salt. Mix, and taste. Add the additional lime or more salt if needed.
