For London broil:
Pre-heat your grill to high heat.
Pre-heat your grill to high heat.
Season both sides of the meat with equal amount smoked paprika, kosher salt and black pepper. Add the London broil to the grill and cook a few minutes on both sides. Depending on the thickness of your meat and personal doneness preferences you will have to adjust cooking time. I cook mine for about 3-5 minutes per side.
Remove from the grill and let the meat rest while you prepare the salsa.
After the meat has rested, slice against the grain and serve with corn salsa overtop.
For corn salsa:
Cut steamed corn off the cob and stir with lime juice, tomatoes, and cilantro. Season with kosher salt, black pepper and a little drizzle of olive oil.
Taste the salsa and season with more lime juice, salt or pepper if needed.
Serve overtop the meat.
