Super Berry Bars


These are no-bake super berry bars. A healthy oat base with a creamy coconut and

vanilla layer, and then topped with a sweet berry layer.

Super Berry Bars [Vegan]

Ingredients

Ingredients for the Base:

  • 8 pitted dates
  • 3/4 cup oats

Bar Ingredients:

  • 1 can coconut milk
  • 1/2 cup frozen blueberries
  • 2 teaspoons Black Goji Berry Powder (or berry powder of choice)
  • 2 teaspoons condensed coconut milk
  • 1 teaspoon vanilla essence
  • 2 teaspoons agar agar

Preparation

  1. To make the base, soak pitted dates in boiling water for 10 minutes. Once done drain the water (but keep this water to one side and do not throw it away).
  2. Add the dates in a food processor and blend - aim to make a date paste. Add in your oats, stir by hand to mix and blend for another 30 seconds. Add 1 tablespoon of the water the dates were soaked in and blend again for another few seconds.
  3. You are aiming for a doughy and sticky like texture. If the oats have dried up the recipe then add in a little of water you soaked the dates in.
  4. Get your moulds and press the mixture in. Ensure that the date and oat base is flat and there are no gaps as you will be pouring a liquid on top. Leave this aside in the freezer.
  5. Get the frozen blueberries and lightly heat them in the microwave or on a hob. Once they are thawed, press the blueberries into a sieve or tea strainer. You essentially want to separate the purple blueberry juice from the solids. Once you have the juice, add in the black goji berry powder and ensure the powder is well mixed.
  6. In order to make two layers you want to half the remaining ingredients. So 1/2 tin of coconut milk, 1 teaspoon condensed milk, and 1 teaspoon agar agar to make one of the layers.
  7. Make the vanilla and coconut layer first. In a pan, heat 1/2 can of coconut milk and 1 tsp condensed coconut milk, vanilla essence, and stir.
  8. Add the agar powder when the coconut milk is warm. Then once the coconut milk reaches boiling point, whisk the agar. Turn off the heat and continue to whisk for another minute.
  9. Pour the white coconut layer on first and leave aside to set. It should set within 10-20 minutes.
  10. Repeat step 7 but this time add the berry juice mixture.
  11. Once prepared, pour the berry layer on top of the coconut layer.
  12. Place the mould into the freezer. We would recommend leaving them there for an hour. This ensures the bars have set and makes them easier to remove.
  13. Ensure the bars have set before removing them. You should be able to simply push them out.
  14. Decorate using fruits.
