ASPARAGUS WITH MINCED MUSHROOM SAUCE [VEGAN]
INGREDIENTS
- 1/4 cup olive oil
- 1/2 onion, chopped
- 1/2 cup chopped Baby Bella mushroom
- 7 chopped White Button mushrooms
- 2 garlic cloves, minced
- 1 tablespoon vinegar
- 2/3 teaspoon sea salt
- 1/2 teaspoon ground black pepper
- 1 tablespoon olive oil
- 2 bunches of green asparagus, trimmed at the base
- Fresh parsley, for serving
PREPARATION
- Heat oil in a skillet over medium heat. Sauté the onion in olive oil for 5 minutes, until softened.
- Add brown mushrooms and white mushrooms in the pan, cooking for another 3-4 minutes. Season with garlic, vinegar, salt, and pepper. Cook for a few minutes and set aside in a bowl.
- Heat a tablespoon of oil in a skillet.
- Add the asparagus and cook them for a minute on each side, just to gain some grilling marks.
- Arrange the asparagus on a platter and pour over the hot mushroom sauce.
- Sprinkle with chopped parsley before serving.
