THAI GREEN CURRY SALAD SANDWICH [VEGAN]
INGREDIENTS
FOR THE SANDWICH:
- 1 15-ounce can chickpeas
- 1 cup fresh mango, cubed
- 4 tablespoons vegan mayonnaise
- 2 tablespoons Thai green curry paste
- 1/4 cup salted cashews, crushed
- Salt and pepper, to taste
- Your favorite bread
FOR THE OPTIONAL TOPPINGS:
- Onions
- Tomato
PREPARATION
- Combine chickpeas, Thai green curry paste, and vegan mayonnaise in a bowl. Season with salt and pepper to taste, then just mash with a potato masher. Make sure you leave some texture. Fold in the mango cubes and crushed salted cashews.
- Add a good amount of the chickpea curry mixture on a slice of your favorite bread, then top with tomato slices and onion, if using.
- Serve.
