Using a pressure cooker has never been more fun or satisfying! Red lentils is a classic vegan staple to make any soup filling and fabulous, and the aroma of this soup is out of this world.
RED LENTIL SOUP MADE IN A PRESSURE COOKER [VEGAN]
INGREDIENTS
- 1/2 cup beet juice
- 1 cup carrots, chopped
- 2 cup butternut squash, cubed
- 2 cup cauliflower florets
- 1/2 cup red onions, finely chopped
- 1/2 red bell pepper, chopped
- 1 cup fire-roasted tomatoes
- 1 sprig parsley
- 2 teaspoon salt
- 1 tablespoon oregano
- 1 teaspoon dried basil or rosemary
- 1 tablespoon fajita seasoning
- 1 tablespoon nutritional yeast
- 2 cup red lentils
- 1 teaspoon cayenne pepper (optional)
- 3 cup water
- 1 tablespoon of lime juice
PREPARATION
- Add all the ingredients into the pot of the pressure cooker (except the lime juice)
- Close the lid of the pressure cooker and set it to the lock position
- Choose the manual option and cook for 20 minutes
- Turn off the machine when done and wait until it’s safe to open the pressure cooker
- Open the lid and add the lime juice
- Mix well and serve
