Ingredients
For the Vegetables:
- 8 ounces oyster mushrooms
- 1/4 cup lime juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cucumber, peeled
- 1 small red onion, thinly sliced
For the Marinade:
- 3-4 serrano chiles
- 1 cup cilantro
- 2 cloves garlic
- 1/4 medium white onion
- 3/4 cup lime juice
- 1 tablespoon white vinegar
- 1 teaspoon salt, adjust to taste
Extras (optional):
- Olive oil
- Tostadas or chips
- Avocado
- Cilantro
Preparation
- First, shred the mushrooms into small strips. Add them to a mixing bowl with lime juice, salt, and pepper. Cover and let them marinate for ~30 minutes.
- In the meantime, stem the serranos and add them to a blender along with cilantro, garlic, onion, lime juice, vinegar, and salt. Mix on high until smooth.
- Pour the mixture over the mushrooms and stir to coat evenly. Cover again and let marinate for another 30-45 minutes.
- Peel the cucumber, cut it lengthwise, and seed it with a spoon. Slice the cucumber into crescent moon shapes and thinly slice the red onion.
- Mix both into the bowl of mushrooms.
- Transfer to a serving dish with a drizzle of olive oil on top. Serve on tortilla chips or tostadas with avocado or more cilantro. Happy eating!
