
A traditional egg ranch tender, accompanied with a crispy synchronized ham and cheese and a spicy ranchera sauce. Enjoy the different textures of this dish.
HOMEMADE HUEVOS RANCHEROS
Ingredients

- 3 tomatoes, (for the sauce)
- 3 serrano peppers, (for the sauce)
- 1/4 onions, (for the sauce)
- 1 clove garlic, (for the sauce)
- 1 tablespoon oil, (for the sauce)
- 1 tablespoon salt
- 1/2 teaspoons black pepper, (for the sauce)
- 4 tablespoons oil
- 8 corn tortillas
- 8 eggs
- 1/2 teaspoons salt
- 1/4 teaspoons black pepper
- 1/2 tablespoons oil
- 1 can bean, (440 g)
Preparation
In a comal over medium heat, pat the tomatoes, chilies, onion and garlic.
Blend the ingredients until you get a homogeneous mixture.
Heat the oil in a pot over medium heat, and add the sauce. Let it boil and fry for 5 minutes. Season and reserve.
In a skillet over medium heat, heat the oil and fry the corn tortillas 1 minute. Drain on absorbent paper and reserve.
In the same pan, fry the eggs to taste and season.
Reheat the beans in a pan with oil. Reservation.
Serve two tortillas in an extended dish, place two eggs on top and serve with ranchera sauce and beans.
