SKIRT STEAK PIZZA
Ingredients

- 3 cups flour, for the dough
- 1 teaspoon salt, for the dough
- 5 grams dry yeast, for the dough
- 2 tablespoons olive oil, for the dough
- 1 cup Water, warm, for the dough
- 1 teaspoon Dried oregano, for the dough
- 300 grams flank steak
- 2 tablespoons Canadian-style Pragná® seasoning for meat
- enough sea salt
- enough olive oil
- 300 grams chistorra chorizo sausage
- 1 cup macha sauce
- 1 cup asadero cheese
- enough avocado, cut into sheets
- enough fresh coriander, to decorate
Preparation
For the dough, on a clean surface, form a cone or volcano with the flour, add salt to the outside of the volcano, place yeast, water and olive oil in the center.
Knead until obtaining a homogeneous and smooth dough, incorporate the oregano. Place in a previously greased bowl and cover with a damp cloth. Rest until it doubles its volume.
Season the skirt steak with the Canadian-style Pragná® seasoning for meat, coarse salt, and olive oil.
Prepare the steak and seal the skirt steak and chistorra sausage on both sides. Remove and cut the flank steak and chistorra into small pieces.
On a floured surface, spread the dough, place on a base for pizza for the rotisserie. Cover the surface with the salsa macha, the asadero cheese and arrange the skirt steak and the chistorra sausage.
Grill on the grill for 15 minutes or until the dough is done. Remove and serve with avocado and coriander leaves, accompanied by a cold beer.
