
This Vegan Spicy Tuna Poke Bowl is packed with lots of super crispy, super fresh veggies.
It gets a touch of richness from the coconut flakes and the sesame seeds, which also add a nice depth of flavour.
Vegan Spicy Tuna Poke Bowl
INGREDIENTS
2/3 cup cooked sushi rice, basmati rice or coconut rice
1/2 cup cooked and shelled edemame beans
1 recipe of Watermelon Vegan Tuna with Spicy Mayo Sauce (makes two serving)
1/2 English cucumber, sliced
1 avocado, halved and sliced
6 red radishes, thinly sliced
1 watermelon radish, thinly sliced
2 tbsp toasted coconut flakes, for garnish
Green onions, sliced, for garnish
Black and white sesame seeds, for garnish
STEPS
- Prepare all your veggies and have all your ingredients as well as two bowls ready.
- Divide rice, edemames, and vegan tuna between two bowl.
- Garnish both bowls with cucumber slices, avocado halves and radishes.
- Top with toasted coconut flakes, green onions and sesame seeds.
- Enjoy immediately.
