Trumpet Royale is a wonderful mushroom to experiment with in the kitchen. They have a mild flavor, tremendous versatility, and even a unique beauty to them. And, as this recipe proves, paired with a creamy lemon sauce, they make a wonderful scallop alternative!
LEMON MUSHROOM 'SCALLOP' ROYALE [VEGAN]
INGREDIENTS
FOR THE SCALLOPS:
- 4 large Trumpet Royale mushrooms
- A pinch of sea salt
- A pinch of black pepper
FOR THE LEMON SAUCE:
- 1/2 cup cashews
- 5 tablespoons ice water
- Juice from 1 lemon
- A pinch of sea salt
- A pinch of black pepper
PREPARATION
- Brush any dirt off of the mushrooms. Cut the stalk into scallop-thick slices. Sauté on a hot pan with a bit of extra virgin olive oil. Season with sea salt and black pepper and cook until the edges are golden brown, approximately 2 minutes on each side.
- Rinse and drain the cashews and add them to a blender along with the other ingredients. Blend until completely smooth and pour into a dish. Place the Scallop Royale on top whilst still warm, crush some black pepper over it, and garnish with dill.
