Boxty are Irish style potato pancakes that are great when you top them with or fold them over something, in this case all of the flavours of a reuben sandwich including corned beef, sauerkraut, swiss cheese and either russian or thousand island dressing. These reuben boxty are super quick and easy to make and I like to take the extra few minutes that it takes to throw them under the broiler, just before adding the dressing, to melt the cheese! What a great way to enjoy some corned beef!
Reuben Boxty (Irish Potato Pancakes)
Irish style potato pancakes stuffed reuben style with corned beef, sauerkraut and swiss cheese along with a tasty russian dressing.
ingredients
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup ketchup
- 1 tablespoon Worcestershire sauce
- 2 tablespoons onion, grated
- 1 tablespoon horse radish
- 1/2 lemon, juice
- 1/4 teaspoon chili sauce
- 1/4 teaspoon paprika
- salt and pepper to taste
- 1 cup potato, grated
- 1 cup mashed potatoes
- 1 cup flour (or rice flour for gluten-free)
- 1 cup milk (or buttermilk)*
- salt and pepper to taste
- butter or oil for frying
- 1 pound cooked corned beef, sliced or shredded
- 1 cup sauerkraut
- 1 cup swiss cheese, shredded

- Mix everything!
- Mix the grated potatoes, mashed potatoes, flour and enough milk to make a nice thick pancake like batter.
- Heat the butter in a pan over medium heat, add the batter and cook until golden brown on both sides, about 4 minutes per side.
- Top the boxy pancakes with the corned beef, sauerkraut and cheese, optionally broil until the cheese has melted, optionally fold the boxy over and top with dressing as desired.
