Avocado BLT Pasta Salad
ingredients
- 1/2 pound pasta (gluten-free for gluten-free)
- 4 strips bacon
- 4 cups baby spinach
- 1 large avocado, diced
- 1 cup tomato, diced
- 1/2 cup creamy guacamole dressing
directions
- Cook the pasta as directed on the package before draining and running cold water over it to cool it.
- Meanwhile cook the bacon and set aside on paper towels to drain and cool before crumbling.
- Mix everything, toss in the dressing and enjoy!
