Tabbouleh is a typical dish of Lebanese food, which is prepared from broken wheat, or bulgur, and is complemented with herbs and vegetables such as tomato, onion, parsley, spearmint, a touch of olive oil and lemon to give it acidity. This tabbouleh recipe is a fresh dish that is used to accompany other preparations such as jocoque, hummus, baba ganoush, among others.

- 3/4 cups broken wheat, (bulgur)
- enough Water, hot
- 4 red tomatoes, cut into small cubes, without seeds.
- 1 white onion, finely chopped
- 3 bunches parsley, finely chopped
- 1/2 bunches peppermint, finely chopped
- 1 cup lemon juice
- 1/2 cups olive oil
- 1 1/2 tablespoons salt
- 1 tablespoon black pepper
- enough jocoque, To accompany
- enough pita bread, To accompany
- enough chickpea, cooked, to accompany
Preparation
Soak the broken wheat in a bowl in hot water for 20 or 10 minutes, if it is precooked; strain and cool.
Mix the broken wheat with the tomato ball, onion, parsley, mint, lemon juice, olive oil, salt and pepper; rest for 10 minutes to integrate the flavors.
Enjoy the tabuleh accompanied by typical Middle Eastern dishes such as jocoque, pita bread, cooked chickpeas or whatever you like the most.
