Most dairy-free fudge recipes make use of coconut oil, but this fudge is completely oil-free! Dates and raisins take its place and hold everything together while still creating a fudge that's creamy and fudgy. In addition to fruit, it's also loaded with oats and crunchy nuts. Try mixing in other ingredients, like shredded coconut, cranberries, pistachios, or anything that suits your fancy.
RAW DATE, OAT, AND ALMOND FUDGE CRUNCH [VEGAN]
INGREDIENTS
- 1/3 cup rolled oats
- 1/3 cup almonds
- 1/3 cup pitted dates
- 1/3 cup raisins
- 1/3 cup walnuts
- 2-3 tablespoons coconut sugar
- 2 1/2 tablespoons raw cacao powder
- 1 teaspoon cinnamon
- 1 teaspoon vanilla (optional)
- 1/2 cup almond pieces or slivers
- 1/2 cup chopped pitted dates
- 1/3 cup organic coconut shreds (optional)
PREPARATION
- Add all ingredients to a high-speed blender or food processor.
- If using a blender, start off low until all of the ingredients have been chopped to resemble crumbs then turn to max speed making sure to move the mix around and away from the blade as much as possible to avoid overloading the motor.
- Keep going until it turns into fudge and starts to form a ball.
- If using a food processor, just keep blending until it turns into a ball, you may have to stop it and push the sides down but persevere, it will eventually get there.
- Turn fudge out onto a board then flatten it out a little
- Place the almond pieces, dates, and coconut if using and knead them into the fudge.
- Roll it into a long log and place into the fridge to get firm.
- After about 6-8 hours it will be firm enough to slice into thin slices with a sharp, clean knife.
- Stores indefinitely in the refrigerator.
