Homemade green wraps with a hint of spinach and some warming ratatouille filling to enjoy on the couch, on the bus, in school, or wherever you are! They are packed with lots of flavors, plenty of veggies, and iron and calcium to keep you satisfied. Plus, if you make this recipe you can officially say that you can make your own wraps from scratch like a pro, which is pretty darn cool if you ask us.
HOMEMADE SPINACH SPELT WRAPS WITH RATATOUILLE FILLING [VEGAN]
INGREDIENTS
FOR THE SPINACH WRAPS:
- 2 cups of spelt flour
- 5 teaspoons spinach powder
- 1 teaspoon salt
- 3/5 cup and 1/2 tablespoon of water
FOR THE FILLING:
- 2 onions
- 1 teaspoon coconut oil
- 2 zucchini
- 3 carrots
- 8.8 ounces potatoes
- 3.5 ounces tomatoes
- 1 teaspoon salt
- 1 teaspoon black pepper
- Juice of a lime
- Fresh coriander
- 1 teaspoon of black sesame
PREPARATION
- To make the wraps, mix the flour with spinach powder, salt, and water to a sticky dough. Then knead on a floured working surface with your hands. Form the same sized balls and roll them out very thinly.
- In a pre-heated, coated pan, fry each wrap for 2 to 3 minutes on both sides, place aside and allow to cool slightly.
- For the filling, peel onions, zucchini, carrots, and potatoes and cut into cubes.
- Heat a pot of coconut oil and cook the onions for 2-3 minutes. Then add the remaining vegetables and fry for a further 5-8 minutes. Now stir the tomatoes, bring to boil once, then reduce the temperature and allow to boil for 12-15 minutes.
- Season with salt, pepper and lime juice. Serve with fresh coriander and sesame.
