CREAMY CHILLED AVOCADO SOUP WITH WHEATGRASS [VEGAN, GLUTEN-FREE]
INGREDIENTS
- 7 ounces fresh spinach
- 2-3 handfuls arugula
- 1 sprig fresh mint
- 1 avocado
- 2 teaspoons wheatgrass
- 1 cup non-dairy milk
- Salt to taste
- Water, as needed
- 2-3 tablespoons chia seeds
PREPARATION
- Blend all ingredients together, except chia, to complete homogenization. If your soup seems too thick, add water.
- Add the chia and mix it in by hand.
- Serve the soup immediately with a garnish of fresh mushrooms if desired.
