This quiche is perfect for brunch and to share with friends!
Quiche [Vegan]
Ingredients
- 16 ounces liquid vegan egg
- 1 vegan pastry pie shell
- 1.5 cup mushrooms, sliced
- 1 cup onion, chopped
- 1/2 cup cherry tomatoes, sliced
- 1 cup vegan cheese
- A handful of baby spinach
- 1 Tablespoon olive oil
Preparation
- Bake pastry pie shells according to package
- Preheat oven to 375F
- Heat oil in a pan. Add onions and saute 2-3 min
- Add in mushrooms and saute until tender
- Add Spinach, cherry tomatoes, mushrooms, onions into pie crust
- Top mixture with vegan cheese
- Pour the liquid vegan egg evenly over the mixture
- Bake for 40-45 minutes, or until the middle of the quiche is set
- Remove from oven and allow quiche to cool for 15 minutes before serving.
